Brussels Sprout Salad

 

Serves 4


Tahini Dressing 

  • 4 oz. tahini (sesame butter) 

  • Juice of 1 lemon 

  • 1 to 2-garlic clove 

  • 1/8 cayenne powder 

  • Add Tamari/Shoyu to taste 

  • 4 drops of the essential oil of lemon 

  • Purified water added according to thickness desired 


Salad

  • 3 cups small to medium Brussels sprouts

  • ½ small red onion

  • 1 carrot

Optional: Can serve raw or lightly steamed

​

​Directions

Dressing:

 

Blend all the ingredients together. Add enough water for desired thickness. Optional: scallions, ginger, herbs 

​

This dressing is excellent for salads, vegetables, pasta, dips. 

Salad:

​

Soak the onion slices is a small bowl of very cold water for 15-20 minutes. Can place in refrigerator while you prepare the rest of the ingredients.

​

Thinly slice or shred the brussels sprouts. Can be raw or cooked. Add to medium sized bowl.

Add thinly cut or shredded carrots to the bowl. The dish should resemble a very fine slaw.  Toss the dish with half of the tahini dressing.

​

Drain onions, blot and add to salad. Fold in more dressing if needed. I recommend a dressing with a drop or two of lemon essential oil.

 

One or two drops of the oil of dill is an additional option.

Serve immediately.
